Sardinia Olives

Olives and olive oil are abundant in the cooking style found in the local restaurants in Sardinia. At lunch or dinner you quite often will be served olive oil, balsamic vinegar and fresh bread while you look over the menu. Near the center of Sardinia, on the shores of the Lisca Lake, you can find one of the oldest trees on earth. According to the University of Sassari this Oleaster, or wild olive tree, is between three and four thousand years old. It was declared a national monument in 1991.
